Although I’m not of Italian descent, there is nothing I crave more after a long and mediocre day than to curl up on the couch with a cool glass of chardonnay, a new television show, and a delicious bowl of pasta. There is something about pasta, be it a hearty Italian sausage tomato sauce or a creamy rich carbonara, that is incredibly nostalgic and comforting. What I don’t want to do after the aforementioned humdrum weekday is spend a bunch of time slaving away in the kitchen. I want a delectable bowl of pasta, and I want it fast. It seems that I’m not alone, because the Internet is filled with amazing recipes for quick and uncomplicated pasta recipes. Here are 10 of my favourites.
Not all recipes for macaroni and cheese require a long bake in the oven. Case in point: this health-conscious recipe for spinach and artichoke macaroni and cheese. The cheese sauce is made with skim milk, low-fat sour cream, pasta-cooking water, and lots of cheese. Fresh spinach and frozen artichoke hearts make it hefty enough to be a meatless meal.
Sun-dried tomatoes are one of the pantry staples that I always have on hand, so this recipe is a good backup when I have practically no fresh ingredients in the fridge. Any type of cheese and herbs can be used, so if you’ve got Monterey Jack and provolone instead of basil and parm, simply use those instead.
Giada de Laurentiis is the queen of everyday Italian cuisine, and I’ve made her recipe for turkey bolognese too many times to count. It calls for shredded cooked turkey meat, but feel free to use rotisserie chicken or raw ground turkey. The ground turkey will cook in the time it takes to make the sauce.
The king of comforting pasta dishes is classic carbonara. Strands of spaghetti are tossed in garlicky bacon fat before being coated in a silky egg and parmesan cheese sauce. Does it get any better than this?
