Cheese Board

Dried fruits

Rosemary crackers

Your choice of cheese

Place all ingredients on a serving plate of your choice.

Chef’s tip: “When choosing cheese I personally opt for a blue like a Roquefort, a soft cheese like Holy Goat and a lovely hard cheese. At the moment I'm really into manchego with a smoked honey. To accompany your cheese you can use anything from candied fruit or fresh fruit, to onion jam or a quince. Then select your crisp breads—lavosh works well or a toasted brasserie bread fruit loaf. Assemble your board and let the cheese sit to warm slightly before serving,” says Ben Varela, Executive Chef of The Woollahra Hotel. “The important thing when making a cheese or charcuterie board is to use the best ingredients you can find.”

Charcuterie Board

Wagyu Bresaola

Organic Sourdough

Place all ingredients on a serving plate of your choice.

Chef’s tip: “Use salami and a wagyu bresaola all available from your local deli, toast some sourdough and serve with pickled onions, watercress and sourdough toast,” suggests Varela.
