The fluffy, buttery sponge cake wrapped in a thin layer of chocolate and sprinkled with a coating of coconut is the quintessential Australian treat. We could never have imagined that we could enjoy that nostalgic taste any other way, but Black Pantry—the creator of unexpected flavoured marshmallows—has proved us wrong, very wrong. Black Pantry Lamington Marshmallows


12 Vanilla bean marshmallows, preferably Black Pantry 

2 Cups chopped dark chocolate

1/3 cup Cream

2 Cups coconut shredded


1. Combine chocolate in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until smooth. Remove bowl from heat. 

2. Place coconut in a dish. Using a fork, dip one marshmallow into chocolate sauce, shake off excess. 3. Toss in coconut and place on a wire rack over a baking tray. Repeat with remaining marshmallows, chocolate sauce and coconut.

3. Stand for 2 hours or until set, enjoy!
