Deliciously Rich Gluten-Free, Dairy-Free Banana Muffins
Food should be nourishing and delicious. It sounds simple, right? With sweets especially, it can be so hard to find treats that are as good to eat as they are for you. My friend Laurel, the baker behind the grain-free and refined sugar–free (and sometimes vegan) goodness known as Sweet Laurel Bakery, has shared some of her simplest and most satisfying recipes with me. My favourite thing about her recipes is that they're always made with whole ingredients, no funny stuff or filler, so even the biggest sweet tooth loves them.
These are Laurel's all-time favourites, and for good reason: Dense, rich, and flavorful, they're hearty but still sweet enough to be a treat. Also, their texture makes them very forgiving to first-time grain-free bakers. If you're nervous about dipping your toe into the "gluten-free" pool, this is the perfect recipe to ease the transition. These lovely muffins are perfect as is, but you could even add chocolate chips, nuts, or dried fruit to have some fun.
NOTE: For about 6 to 8 jumbo muffins, or 12 standard muffins
1 1/2 cup almond flour
2/3 cup coconut flour
1 ½ teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon ground cinnamon
4 tablespoons grape seed oil
1/4 cup maple syrup
5 over ripe bananas, smashed (makes about 1 1/2 cups)
Ingredients for filling
NOTE: Stir the following all together
1/4 cup plus 2 tablespoons almond butter
1 tablespoon honey
1 teaspoon cinnamon
Preheat oven to 350°F. Line muffin tins with parchment or use a silicone jumbo muffin tin or a standard muffin pan. Stir together all dry ingredients. Whisk together all wet ingredients except banana. Stir the wet ingredients into the dry, then add the banana. Pour 1/4 cup (if using jumbo cupcake pan) of batter into cupcake tins. Pour 1 tablespoon of filling over batter, then pour one more 1/4 cup of batter over filling. Bake muffins 20-25 minutes. Allow to cool in pans about 15 minutes, then remove and enjoy.
