The One Health Food Trend Nutritionists Can Actually Get Behind
As with décor, clothing, and lifestyle, food trends come and go; just look at the rise and fall of coconut oil, turmeric, kale, Brussels sprouts, and the like. Fortunately, we can look to the pros to discern which food crazes are more than just a passing fad. Typically, they tend to be nutritionally sound, environmentally sustainable, and of course, delicious.
According to Jennifer Glockner, a registered dietitian and nutritionist, the trend of using fruits and veggies as grains is definitely worth trying. "This trend offers countless health benefits such as vitamins, minerals, antioxidants, and fibre," writes Glockner for Mindbodysoul. "For example, instead of just cooking traditional pasta made from grains, many are utilising spiralizers to make delicious 'pasta' from veggies like squash, carrots, and broccoli."
To that end, chefs and nutritionists are getting increasingly creative with the use of plants and vegetables as a sustainable meat and dairy replacement. Case in point: Companies like Impossible Foods, whose mission is to "transform the global food system… by making uncompromisingly delicious meat, fish, and dairy foods directly from plants," according to a press release. Their plant-based Impossible Burger is already making waves in the New York restaurant scene and the company hopes that it will eventually become a staple in all American kitchens.
