We love a good “vacay” beverage. Making the connection between warmer weather, sunshine and an off-duty state of mind is always a worthwhile discovery. And of all the spots in the world to wander off to when we dream of long summer days, our very own Sydney is a great place to start, offering a worldly libation lineup from zodiac-inspired sips to refreshing bitters and beers. The poisonous pair below stand out in their ability to make #takemeback a reality. Until you’re able to take that summer vacay (or at least until it starts heating up again later on in the year), we'll be reliving the summer sun in a chilled glass, and serving it to friends at our next dinner party. Follow the two recipes below for your easiest way to recreate summer vibes yet.
This spicy-sweet throwback is an all-time bestseller at Sydney’s Lobo Plantation. Though the real deal requires theatrics (attempt to blowtorch a cinnamon quill at your own risk!) and a top-secret housemade vermouth recipe, a few modifications yield a drink that’s (nearly) as good as the original.
60mL spiced rum
30mL vermouth 30mL fresh lemon juice
15mL simple syrup
Combine all ingredients in a cocktail shaker, and shake. Strain into a rocks glass filled with cubed ice. Garnish with a lemon peel twisted around a flamed cinnamon quill.
Our passionfruit fixation reached a fever pitch during the course of our Aussie exploration. No matter how it was served—atop greek yogurt, pillows of Pavlova, or even spicy salads—we couldn’t get enough of the tropical tart fruit. Perhaps nowhere was it more of a star than in this easy-drinking cocktail from Watsons Bay Boutique Hotel, perfect for a day at the beach club.
2 ripe passionfruit, one scooped, one halved for garnish
75mL Gordon’s London Dry Gin
15mL simple syrup
Add the pulp from one passionfruit (including the seeds), gin, simple syrup, and juice of one lime to a cocktail shaker or mixing glass. (Note: We like our drinks tart! If you’d prefer a sweeter version, juice just half of the lime.) Shake vigorously or mix well.
