Researchers in Japan have discovered that the proteins found in these starchy remnants have the power to suppress appetites in mice.
The study from the National Agriculture and Food Research Organisation, Tsukuba fed two groups of mice high fat diets and just one of the groups sweet potato peptide. After 28 days, the group fed the sweet potato peptide as part of their diet had a significantly lower body weight, cholesterol, fat cells, and leptin levels (the last controlling hunger).
So before you pour out the water leftover from the sweet potatoes you're serving up for dinner, consider giving this surprising strategy a try.
