Happy Hour: A Savoury Sushi Cocktail

_new Most cocktails have a certain sweetness to them, but sometimes we're in the mood a drink that's a little more savoury. A Bloody Mary usually answers that call, but if you're looking for a savoury cocktail that's also light and refreshing, this sushi-inspired cocktail is the answer. Made with soy sauce, ginger syrup, fresh fish, and wasabi, this drink is high in umami, the Japanese word for "a pleasant savoury taste." Needless to say, it's bound to be a hit at your next Spring gathering (and it's already a favourite at our office happy hours). Read on to learn how to make this savoury, low-calorie cocktail. Ingredients 2 oz. aged Japanese whisky, such as Hakashu 12-Year Japanese Whisky 1 oz. soy sauce 2 dashes of fresh homemade ginger syrup 2 dashes of Angostura bitters 1 tsp. wasabi, plus wasabi for rim 1 pc. sashimi, such as red tuna or salmon, sliced 3/4 vertically Directions Muddle wasabi, soy sauce, and ginger syrup in a cocktail shaker. Add whisky and bitters. Fill glass with ice and shake until cold. Double-strain with a tea strainer into a chilled double old-fashioned glass. Garnish glass with sashimi. Rim with wasabi.
