We're Obsessed With This No-Bake Dessert Recipe

Baking can be very intimidating, even for experienced cooks. The world of making sweets and breads seems to be in a league of its own. That's why I love to craft goodies that are easy to throw together and delicious to boot.

One of my absolute favourite desserts is a classic from my childhood: s'mores. They are so simple to make, but the combination of flavours and textures is unbeatable. I've created my own little twist that guests always get excited about, and my recipe elevates the usual s'mores with a few simple swaps: caramel drizzle for chocolate and an added scoop of peppermint ice cream. Kids and adults alike will love it. For the one doing the cooking (that's you!), this is a great simple dessert for last-minute guests, and it uses ingredients that you may already have in your pantry. The peppermint ice cream is a personal favourite of mine but can be swapped out for any flavour.

Ingredients:

1 carton mint chocolate chip ice cream
1 box graham crackers
1 bag marshmallows
1 to 2 bars chocolate
Caramel sauce
Pinch of Maldon sea salt

Directions:

Layer graham crackers with a scoop of your favourite ice cream. Then layer with a toasty marshmallow. You can warm these with a torch or place marshmallows under the broiler for a few seconds and then set on top of the ice cream. Drizzle caramel or chocolate sauce over each for another level of decadence.
