This Mexican Salad Is Insanely Easy to Make (It Has 220,000 Saves on Pinterest)

While we love a good burrito bowl no matter what the season, there's something about wintertime that has us craving spicy chicken tacos and enchiladas. True to form, we turned to Pinterest in search of a light and healthy Mexican recipe and stumbled upon this Mexican street corn salad from vegetarian food blog Live Eat Learn. The salad is "a healthy, simple take on elote, the delicious Mexican street vendor version of corn on the cob," explains Sarah of Live Eat Learn. Her pin has since garnered 217,700 saves on Pinterest, but we can't say we're surprised—her recipe is healthy, extremely simple, and chock-full of nutrient-rich vegetables like onions, garlic, black beans, and peppers. Ingredients for Salad Dressing
Plain nonfat yoghurt
Lime juice
Honey
Paprika
Cumin
Ingredients for Salad:
Splash of oil
Ears of corn, shucked and kernels removed
Garlic clove, minced
Lime juice
Salt
Canned black beans, drained and rinsed
Red bell pepper, seeded and chopped
Chopped red onion
Fresh coriander, chopped
Cotija cheese
Directions:
Mix all dressing ingredients, and set aside.
Heat oil over medium/high heat in a large saute pan, and then add garlic and corn. Cook about 15 minutes, flipping frequently, until corn begins to char a bit. Gently toss with lime juice and salt.
In a large bowl, combine corn mix, black beans, pepper, onion, coriander, and cheese. Drizzle sauce over, and serve either warm or cold. Perfect over tacos, as a chip dip, or by itself.
