Molly Sims's 5 Tips to Host an Easy (and Potentially Last-Minute) Easter Brunch

This month she shares her top hosting tips for an easy but chic Easter brunch the whole family will enjoy.
When it comes to hosting and entertaining, I tend to go all out. It’s definitely the Southern girl in me. I’ll be honest though, it was a lot easier when I was single with no kids. I still plan my parties but I also tend to do things a bit last minute, too. Fortunately, some of the best parties I’ve thrown have been... well, thrown together.
Easter is right around the corner so it’s the perfect time to fill you in on a few of the many tricks I’ve learned along the way. To be specific, I’ll be sharing how to host a springtime Easter brunch on a time crunch and a budget. I mean, who doesn’t love a good brunch? Especially when it’s been so nice outside. Here are my 5 tips to host an easy (and potentially very last minute) brunch this Easter holiday.
Keep The Menu Simple
Brunch is all about light and fresh so don’t stress too much about the menu. There’s truly no reason to be slaving away all day in the kitchen. There are tons of delicious and healthy recipes that take little prep time such as salads, chilled soups, mini quiches, and popovers. With that said, I also prefer to serve buffet style at a brunch rather than a sit-down meal. Designate a table to display all the dishes in a stylised way with a beautiful floral arrangement.
Currently, I’m obsessed with minimalist ceramic and textured bowls for this type of serving. When I have people over really, really last minute, I’ll throw a salad in one even if it’s store bought. (Shhh...it’s our little secret!) And, for the kids? I always think it’s easier to prepare something ahead of time and have it ready. For example, mini pizzas and breaded chicken tenders are a fast and foolproof option.
Build A Candy Station
Easter is one of those holidays where candy reigns supreme. It’s just so good. Chocolate bunnies, anyone? Like the main dishes, don’t feel like you have to spend all day in the kitchen whipping up desserts. All you need is the candy aisle, various sizes of apothecary jars and bowls, and serving spoons.
I love that it’s something different and also adds as an extra piece of décor. For a take-home favour, add small bags and ribbon next to the jars so your guests can tie up their treats for later. You’d be surprised how much the adults get into this.
Keep Florals As Your Main Decor
Don’t overcrowd your home or table with too much. It ends up looking a little overdone and takes more effort on your part. Keep it simple. All you need is some beautiful florals and a classic tablescape. Play with the plates, linens, and flatware for some extra fun or an added punch of color or pattern. I’m not a fan of paper decorations or other kitschy items. It should be pretty and chic. This Easter, I’m obsessed with a more muted palette. I’m talking pale peaches, light pinks, and beautiful white roses. Throw them in a ceramic vase for an instant and stylised look.
Plan A Mess-Free Kid’s Craft
If you plan on having kids over, keep in mind that you’ll need some activities (besides the egg hunt, of course!) The key words here? Mess free. I can’t even tell you how many times I’ve set up a craft for the kids and completely regretted it.
If you plan on dying eggs, stick with washable watercolor paint and pencils. The standard dye that comes with most egg kits can be really messy. Plus, the watercolors leave more room for creativity with the kids. Stickers are a cute addition, too. Set aside a table with the watercolours, brushes, and other supplies and let them create. If they are anything like my kids, they will be at it for hours.
Create A Signature Cocktail
No, you don’t need to be a professional bartender or mixologist to achieve this. My husband makes fun of me for this but you know what? I love a good signature cocktail even if it’s for a casual get-together or brunch. Prepare ahead of time and set aside in pitchers or serving jars. This could include a mimosa bar with an ice bucket of champagne bottles and juices or pitchers full of your favorite mixed cocktails. For the season, a fresh recipe like a Paloma or Moscow mule is always a safe bet.
In addition, I’m all about a rosé slushie. I know it was super trendy last year but I can’t get enough. I’m sure this has something to do with the fact that I was pregnant last year during both spring and summer. So this mumma is now craving it, big time. It’s so refreshing. I served these slushies at a party recently and everyone raved about. Here's my simple recipe:
1 bottle of your favourite rosé
4 oz. of Belvoir Elderflower & Rose Lemonade
Lavender sprigs, for garnish
1. Pour bottle of rosé into ice trays and let freeze overnight (or 8 hours).
2. Once frozen, add rosé cubes, lemonade, and a handful of regular ice cubes into a blender.
3. Blend until ice cubes are at your preferred consistency. I like mine a little icier.
4. Pour into glasses and serve immediately. Garnish with a sprig of lavender.
